Cheesecake is one of my favorite desserts! Who doesn’t love cheesecake?! And i love trying out new flavors of cheesecake, the only problem is that i can never decide which flavor to make…lol. Hence the mini cheesecakes. These were three 6 inch cheesecakes each a different flavor that i made in the Passover/Easter baking fest (the passover versions had a surprisingly yummy pecan, sugar, and matzo cake meal crust). Flavors included traditional Strawberry Cheesecake, a Peanut Butter cheesecake, and a Caramel Praline cheesecake. I love doing smaller desserts of different flavors, so then there is something for everyone, or if you’re like me, you can sample a little taste of each. Like the ladies of “The Golden Girls” say, there’s always room for cheesecake!
