So although i’ve been with my husband for almost 8 years, i was always scared of making passover desserts for his family. No flour, how to do this? This little Italian catholic girl had no clue, hence why i avoided it for 8 years….lol. So i was sick of eating strawberries for passover dessert year after year, i decided to embark on a mission to make non icky passover friendly desserts. So this year i got brave and creative, and once i got past the fear, it was actually a fun challenge. Luckily my in laws are pretty reformed, so all i pretty much had to follow was no flour. Of course i wanted to play so here is what i came up with . Flour less chocolate tortes with a little twist, fillings!
It’s a layer of flour less chocolate torte, a layer of a yummy filling, and then another layer of chocolate torte cut into cute little squares with a decoration on top. The fillings including chocolate frosting , mint frosting, raspberry jam, and a milk chocolate peanut butter ganache with peanuts!
But i couldn’t stop there. I had some leftover layers of chocolate torte i didn’t want to waste so i thought, hmmm, what can i do with them instead of 1- throwing them out or 2 – eating them all…lol. Hmmmm maybe make little dome cakes? So i found some small bowls, lined them with plastic wrap, layered the leftover chocolate tortes with the fillings, and then froze them. Once out of the freezer they were super easy to invert, cover with chocolate glaze, and of course my favorite part, decorate! Two desserts in one ! Love it!
