New mini cupcake flavor alert!! And i think this one’s a total keeper!! I wanted to try out a new flavor for the mini cupcakes but, as usual, had a bunch of ideas swirling about in my head (not to worry there are more fun flavor experiments coming soon!). The pantry was kind of lacking anything too exciting post valentine’s day rush, but we did have caramel and toffee pieces left over from the reality tv cake. And I LOVED that flavor so much in the cake version, I thought, we can do this in cupcake form!
So I had some plain buttercream I was able to make into the salted caramel buttercream (omg so delicious I could eat it by the spoonful, i’m so in a salted caramel phase lol). And I filled each little chocolate cupcake with a burst of gooey caramel in the middle before icing them. Then I sprinkled some toffee pieces on. But it still was missing something, it didn’t look finished and I was worried I hadn’t squeezed enough caramel into the cupcakes. Of course this is at 2 in the morning. I get my best ideas at random hours of the morning…lol. So luckily i had a wee bit of caramel left over, and let me tell you it was a little bit. So i melted it down with some heavy cream and drizzled it over the cupcakes. It was just the finishing touch it needed both visually and taste wise. It gave it more of a really decadent “ooey gooey” factor, yes that is a technical term…hehe. So i am super happy how these came out, and they were one of the first to sell out at the event. Yay for caramel toffee crunch cupcakes, they are so here to stay!
