Beach Cupcakes

Cupcakes perfect for the Summer! I had seen these a while ago in a cupcake book while browsing the cookbooks in Barnes and Noble (one of my favorite sections of that store…so easy to get lost there…lol) And i never got around to trying them. But since i had some supplies left over from the beach wedding cake, i thought oooo i can finally give it a go!

These are basic chocolate and vanilla cupcakes, with ivory icing and graham cracker crumbs for the “sand” and blue icing for the waves. I just put it on half and half and used a toothpick to “pick up” come of the waves. I wish i had plain white icing, because i think it would have been cool to put some white foam on the waves.  But alas, they’re still cute. And i love the little umbrella and mini shell (yes again left over from the beach wedding cake).  Gotta love multipurpose desert supplies. Hope everyone is having a safe and happy Summer! :)

NYC and LA Sugar Cookies

I LOVE these cookies! Almost as much as I love NY!  This was a super fun custom cookie order for one of our corporate clients that does business both on the east and west coast and wanted to incorporate that into these gifts for their clients.  We used a combination of our sugar cookie icing as well as royal icing to decorate them.  And we got to use edible frosting sheets with our new edible ink printer! Very exciting! The “I Heart NY”, “Sunset Blvd”, as well as both the Central Park and Rodeo Drive Scenes were all printed  out onto edible frosting sheets and then applied to the iced cookie. I have to say i’m LOVING my new edible ink printer!!!  Oh the possibilities!!! (insert evil pastry laugh here…lol) And there will definitely be more fun uses of our new found medium,  so definitely stay tuned!

Chocolate Truffle Tree

I’ve been in cake and cookie land for a while, so i thought it was time to play with some hard core chocolate truffles again! Introducing the truffle tree! This is my new favorite way to display the truffles  and it’s super fun and interactive for parties! I had been wanting to try this for a while and i finally had a bunch of extra truffles on hand so i thought hey why not It’s really pretty simple. Just a Styrofoam cone in the middle and each of the truffles is held on by your ordinary run of the mill toothpick. Topped off, of course, with a purple bow! You could add other garnishes, but i liked the simplicity of the beauty of the truffles. Yay for chocolate truffles in any form!

Ferrari Logo Cake

This was a recent order for a surprise 70th Birthday cake! The cake itself is yellow cake with cannoli filling and frosted with our lucious chocolate buttercream. Dark chocolate shavings garnish the sides, and the logo is printed with edible ink onto frosting paper. Yes that’s right edible frosting paper! Happy 70th Papa Yannuz!

4th of July Flag Double Decker Brownies

Happy 4th of July!!! And what better way to celebrate than with chocolate….chocolate….and more chocolate!!! These are our original double decker brownies dressed up for the 4th. For those of you not familiar with them, it’s a chocolate chip blondie on the bottom, our decadent fudgy brownie on top, and a little bit of chocolate ganache in the middle holding it all together. For this flag variety, i cut them into pieces resembling a flag, drizzled them with colored chocolate, and then put them back together. I love doing desserts like this because you get the effect of a larger dessert, but still have awesome little bite size pieces. A plus all around! We hope everyone has a fabulous 4th of July filled with good weather, fun times, and some delicious desserts! :)

Beach Wedding Cake

We are so happy to have gotten to make our first official out of town wedding cake! I made this very special beach themed wedding cake for my brother-in-laws (and now new sister-in-laws) beach wedding on beautiful Cape Cod in Provincetown, MA. This was such a fun cake to make and our first cake we had to assemble on site so far away from NYC. It was a fun and exciting challenge and  such a pleasure to make for such a special couple! :)

This cake has a lot of fun stuff going on. First off, each tier was a totally different flavor. The bottom tier was our decadent chocolate cake with vanilla buttercream filling with dark chocolate crunchies. The middle tier was yellow cake with cannoli filling and the top tier was yellow cake with fresh strawberries and whipped cream (the grooms favorite! ). The whole cake is iced with “sand colored” vanilla buttercream, all the shells are made of fondant, and the “sand” is crushed graham cracker crumbs. Almost everything was edible except the fences and the two cute little chairs on top. And i also found a cute plastic bunny rabbit to put on one of their chairs to represent their pet bunny Caeri. The bunny was my favorite little detail, it’s just too cute! :)

Since this was our first out of town cake there was a lot pf prep work before hand. We baked all the layers before we left, and we also made all the icing,  fillings (except the strawberries and whipped cream),  and fondant shells before hand. And then we packed it up for the cape. Happily, i have to say everything  traveled the 6 hour drive really well (yay for plastic wrapping well and heavy duty coolers!). Granted i had extra of everything except i forgot a sweatshirt for me and a few other clothing items lol. Extra icing check, all cake supplies check, clothing… oh who needs extra of that…lol. Thanks to my great mother in law and my cousin Molly for loaning me theirs all weekend…lol. But i am happy to say the cake assembly went pretty smoothly. It took a full day, but i was very excited since i was able to assemble the cake in a gorgeous modern cape cod kitchen (in an equally jaw dropping house). And in addition, it had incredible views of both the dunes and the ocean. You can’t beat that!

And since i had brought so much extra just in case, i was able to make them 2 additional 7 inch cakes (one cannoli, one strawberry). They were staying for a week with a large group, so i doubt any extra cake went to waste….hehe. In addition to the main cake and extras, i also made a small matching “smash cake” as a surprise for the bride. When she saw the last smash cake i made, she loved it so much and said she never had one, so the groom thought it would be a fun surprise. And she loved it! Fitting the cake layers  in a side by side fridge was definitely tight but we did it!  I’m so glad we got the measurements ahead of time before we started baking..lol

We are happy to report that Scott & Heather LOVED the cake and it was a hit at the amazingly beautiful and super fun wedding!!! We were sad to leave the gorgeous cape cod beaches, but were so happy Heather and Scott had such a great wedding weekend and that we could be a part of it!

It’s a Girl! – Cookies & Brownies

It’s a girl! This was a custom new baby order we did recently. We have cute as a button mini sugar cookies in fun baby shapes (the onesie is my favorite!, i love the little duckie ) And below we have our frosted brownies dressed up in pink frosting, chocolate letters, and colorful confetti sprinkles! a tasty way to welcome a new baby girl!

Cheesecake Pops

Two of my favorite things rolled into one – cheesecake and chocolate  together in pop form!   To make these i used a small cookie scoop to scoop balls of almost frozen cheesecake, stuck a lollipop stick in them, and then put them in the freezer to set. Once they set, i dipped them in milk and white chocolate and topped them with graham cracker crumbs. YUM!  I also want to try a PB cheesecake version as well, that would be delicious.  It was a bit of a pain, since the cheesecake kept melting, you could only really do a few at a time. But it was so worth it! :)

45th Anniversary Peace Sign Cake

This was a custom cake for a long time client for their 45th Wedding anniversary!  They wanted chocolate cake with chocolate frosting, since that is what their wedding cake was (super cute!), and she thought raspberry preserves would be a nice addition as the filling. The only other requirement was it had to incorporate a peace sign since the happy couple have been enthusiastic activists  for civil rights and other great causes since the 1960s and they continue to do so even today.  How great is that!?  Here’s to many more great years! Superman Police Shield Graduation Cake

This was quite an unusual cake for a long time client for her son’s college graduation.  The graduate is going into a great job in the criminal justice field, LOVES Superman, and plays lacrosse.  So we tried to come up with something that incorporated those three themes and this is what we came up with – a police shield cake with superman bursting through it holding a lacrosse stick.  It was definitely a challenge but a fun one. Everything is edible, except for of course the Superman figurine.

The cake itself is yellow cake with vanilla rainbow sprinkle icing filling covered and decorated with fondant, and my favorite, edible silver luster dust to give it the added shield sparkle! The lettering is done in royal icing and superman is standing in a pool of red sanding sugar, to keep with the red Rutgers theme. And the graduate loved it, to quote ” This cake is SICK! It’s the most awesome cake ever!!!”, so i took that as a very good sign. Happy Graduation Bryan!!! :)
