What to do with leftover Thanksgiving desserts?

Find some leftover party beverage cups, mash up the leftover pumpkin pie and simply layer it with cream cheese frosting (either homemade or store bought)  to make a pretty and delicious pumpkin parfait! A secret to make the frosting easier to work with – microwave the frosting in 5 second intervals to make it pourable.  You could even use whipped cream instead of the cream cheese frosting (except don’t microwave that…lol).  Then top with festive sprinkles, nuts, caramel, or whatever you have leftover. This works with pumpkin pie , pumpkin bread, brownies, cookies, or even apple pie. Use your imagination and give those leftover desserts a new twist!

Mini Pumpkin Cakes

single pumpkin cakeAs you can tell I LOVE anything pumpkin! These are a twist on the usual pumpkin bread. Made instead in mini bundt pans and then drizzled with cream cheese frosting and topped with festive Fall Sprinkles.  A great alternative to the usual large dessert, this gives everyone their own special portion!

Gingerbread Pumpkin Bars

I discovered these last year and now I make them every year for Thanksgiving.  Imagine pumpkin pie combined with gingerbread cookies, and more crumb topping,  and then drizzled with powdered sugar glaze all in a nice little bar! Deeeeeelicious!

Super Mario Brothers Cake

mario cake fullTaking a little break from Fall treats, I had the great pleasure of doing a totally fun Super Mario Brother cake this past weekend!  Growing up with Super Mario Brothers, I had a ball creating this cake for a very special boy’s 6 year old birthday!

The cake is made of up three different flavor cakes. The top tier is yellow cake with vanilla pudding, the bottom tier is chocolate cake with vanilla chocolate chip frosting, and the mushroom on top is yellow cake with vanilla buttercream and then covered in fondant. The tiered cakes are frosted in tinted vanilla buttercream (the sky), the bushes are also done in  buttercream, and the various decorations are made of fondant.  The two super cute plastic figurines were the perfect finishing touch for the top.

I am happy to report that we had one very happy 6 year old boy! :)

Chocolate Leaves and Pumpkins

choc. leavesFun Fall chocolate! These were made for a fall themed baptism! We made the cute little pumpkin lollypops for the kids, and marbled chocolate fall leaves as the favors for the adults. Pleasing to the eyes and to the tummy! Cute and delicious!

Apple Caramel Crumb Bars

large apple bar closeupThese are my new favorite for the Fall! Apple caramel crumb bars! Made with a simple shortbread crust, then layered with spiced apples and chunks of gooey caramel, and topped with lots of buttery crumb topping, and of course more caramel! Apples, caramel, and crumb topping – what could be better? :)

Thanksgiving Treats – Fall Harvest 2009

New this year are our super moist pumpkin cupcakes with decadent cream cheese frosting.  I have to say they are quite addicting! Also, back from last year, we have pumpkin spice bread, pumpkin cake bites, and white chocolate cranberry oatmeal cookies! Just as delicious as ever!

Old Man Belly Cake

old man belly cake fullThis was a very unusual but totally fun cake to make! It was for a surprise 70th birthday party on Halloween, which was indeed the actual birthday of the guest of honor.  The cake is chocolate cake with mocha frosting and fondant on the outside. We decided to make the boxer shorts a little more festive for Halloween.  Nothing says Halloween like an old man belly cake…lol.
